Bucatini alla Carbonara
• 1 pound Perciatelli or Bucatini my favorite
• ½ pound pancetta — diced or cut into strips
… • 1 medium onion chopped
• 2 medium egg yolk or 1 whole egg and 1 yolk (very fresh)
• 1 1/2 oz Parmigiano-Reggiano, finely grated (3/4 cup)
• 3/4 oz Pecorino Romano, finely grated (1/3 cup)
• olive oil
• salt and pepper - handful of chopped parsley

1. Cook the pancetta in a pan along with the onion and a little oil, until the pancetta is well colored and onions are soft.
2. Beat the eggs in a bowl with half of the cheese and a lot of fresh ground pepper place bowl over boiling pasta beat with whisk.
3. Cook the pasta in boiling salted water, until al dente, drain lightly and add to beaten egg and cheese let the pasta rest on the egg mixture for a minute or 2 then turn this will set the eggs
4. Mix pasta with pancetta and onions. Mix well. Add the rest of the cheese. Dust with parsley. serve immediately. If you like hot add a little red pepper flakes.

You seem like you appreciate the simple things in life and always love to have a good time. I think we would have a lot in common. A little bit about myself I do have some weird qualities like I wear mismatched socks, I have the tendency to take really long showers/baths, I love the rain, I love decorating for all holidays especially Halloween and Christmas (pumpkin carving is one of my favorite things to do on Halloween though I’m probably not to good at it ), I’m sometimes scared of the dark(especially when I have nightmares), I don’t get much sleep(butterfly kisses in the morning are always nice they will always make me smile), I love to hear ghost stories(the best way I can scare someone is by hiding in a closet and jumping out and saying boo or rawr), I love tickle wars(I’m very ticklish) & pillow fights, I like the sound of wind chimes and whistling(I can’t whistle very well), I always wanted to make someone heart shaped PB&J sandwiches(ever since I saw the movie Mermaids when I was little), I’ve always wanted to be a cartoon, I have a lot of stuffed animals(some handmade by my grandma from when I was little), I love lots of music( like Nirvana, Sam Cooke, Nat King Cole, Spin Doctors, Smashing Pumpkins, James Taylor, and tons more), I’m a coward(I’m scared of lots of stuff), and I love to dance(warning my dancing is bad like my singing). I’m just starting out as an actress recently did my first audition and hoping to go far with acting since it’s my dream and I love to entertain people. I have been told that I’m funny so I can make you laugh. I think we could be good together you just seem very outgoing and loves life and has a very good sense of humor as much as I do. If you give me a chance you won’t regret it and I would appreciate it very much and would never use you or take you for granted. I’m very spontaneous at times like with writing you this letter and I can surprise you in a good way. I know this letter might be dumb and I wish I could of done this in person but I hope you still find this creative and sweet and I just hope that this doesn’t freak you out.
